Philly Cheesesteak Sloppy Joes are a quick, kinda cheater version of a Philly Cheesesteak, swapping out the tender roast beef for a quick ground beef.
Speedy and quick, these have all of those great Philly Cheesesteak flavors when you want them in a pinch!
This week's Sunday Funday theme is Father's Day - this was the perfect recipe for that challenge as Philly Cheesesteak is on of Hubs' favorites! I never even though to ever try one (or make them) until I noticed him ordering Philly Cheesesteak when it showed up on a menu!

Philly Cheesesteak Sloppy Joes
Adapted from Carlsbad Cravings
Filling
1 pound lean ground beef
1 small onion, diced
1 green bell pepper, diced
3 cloves garlic, minced
½ cup water, simmering
1 beef bouillon cube
2 tablespoon ketchup
2 tablespoons worcestershire sauce
1 teaspoon dijon mustard
1 tablespoon cornstarch
½ teaspoon paprika
Salt & pepper, to taste
To Finish
6-8 buns
Butter
Provolone or muenster cheese slices
Place the beef, onions, and peppers in a large skillet over medium heat. Cook for 5-7 minutes or until beef is browned and peppers and onions are softened. Stir in the garlic.
Stir together the water and bouillon cube until cube is dissolved. Whisk the ketchup, worcestershire, mustard, cornstarch, and paprika into the bouillon mixture. Pour into beef. Cook 2-3 minutes or until sauce is thickened. Season with salt and pepper.
Cut the buns in half. Spread the split sides with butter, and place cut side up on a baking sheet. Place under the broiler until toasted.
Fill the buns with sloppy joe mixture and top with cheese. Serve hot
